Roasted Sunshine Coast Sweet Potatoes with Macadamia Pesto

Ingredients:

  • 2 large sweet potatoes
  • 1/2 cup macadamia nuts
  • 1/4 cup fresh basil
  • 1 garlic clove
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

1. Preheat your oven to 200°C.
